Wynns Coonawarra Estate Black Label Cabernet Sauvignon 2021, South Australia

Michael Godel – Wynns sets the gold standard for Coonawarra cabernet sauvignon and if you have not yet become a believer than this is the bottle with which to get started. The unwavering bluster of its aromatic capacity accedes the fifth dimension. That endows the Wynns Black Label with one more than the usual three spatial dimensions and the fourth dimension of time used in relativistic physics. At least as it pertains to cabernet sauvignon because logic, proportion and measurement determine how special the perfumes truly are. This 66th vintage brings the cool factor, a graphite, mint and sweet blackberry sensation gained that skills through flavours with complex stars shooting through the black spaces of the wine. Galactic stuff, so enjoyable and age worthy to the end of the following decade. The drinking window will open after the clock strikes 2025.

Sara d’Amato – A carefree and refreshing white for when you just need a break from it all, here’s a notable value independent of rash holiday sales. A result of a nearly centenarian plot of a verdejo, a variety with similarities to sauvignon blanc, in such that it offers lively acidity, sweet citrus fruit, and a pleasant savoury character. Notably salty and lightly chalky with impressive concentration yet an invigorating and upbeat disposition.

Megha Jandhyala – My “only one” this week is Hidden Bench’s 2020 Terroir Cache. This is a special wine of unusual length and depth. Unfined and unfiltered, it is beautifully balanced, with a sense of fullness yet agility on the palate. I plan to buy a couple of bottles of this gorgeous Ontario wine to enjoy in a few year’s time, once it has mellowed and resolved further. It is a particularly good example to introduce to people unfamiliar with Canadian wine to showcase this country’s capacity to produce excellent Bordeaux-style blends.
